2 cups flour
1 teaspoon ginger (heaping)
2 teaspoons baking soda
1 teaspoon cinnamon (heaping)
½ teaspoon salt
½ cup canola oil
1 cup brown sugar (packed)
1 egg
¼ cup molasses
white sugar to roll dough in
Combine ingredients in food processor (or in big bowl by
hand).
Chill in fridge overnight or in freezer for 20 minutes (if
you don’t have time to chill, cookies will be thinner).
Roll into 1” balls.
Roll in sugar.
Bake at 3500 for 8-15 minutes (usually 8-9).
Makes ~18 cookies.
